6 Whole Sweet Potatoes
½ c. Butter melted and divided
½ c. Maple Syrup
1 c. Chopped Pecans
¼ c. Maple Sugar
1. Peel, chop, boil, drain and then mash sweet potatoes.
2. Preheat oven to 350
3. Once cooled, stir in eggs, maple syrup, and ¼ c. butter.
4. Scoop into a greased 2qt casserole dish and spread evenly
5. In a separate bowl combine the pecans, Maple sugar and remaining ¼ c. butter
6. Spread pecan mixture evenly over the sweet potato mixture
7. Bake for 30 mins
